Days 2 &3 Recipes
Breakfast Quiche
9 Eggs
1 lb. Ground Beef
2 C Spinach and Kale
½ Sweet yellow onion
½ t Cocoa (100% Cacao)
1.5 t Cinnamon
½ t salt
Preheat oven to 375 degrees.
In a small pan over low-medium heat, brown onions in coconut oil (or bacon fat)
until tender. Add ground beef and cook until brown. Mix in 1 t cinnamon and
salt. Then mix in the cocoa powder. In a medium-large bowl, whisk eggs,
remaining cinnamon. Grease a 9×13 baking
dish with coconut oil or bacon fat and pour egg mixture into the dish. Spread
the chopped spinach onto the egg mixture. Finally, pour the meat/onion mixture
into the dish on top of the eggs. Spread the meat out evenly and make sure the
spinach gets covered in egg. Place in the oven and cook for 45 minutes or until
the quiche starts to lightly brown on the top or begins to rise.
Turkey Sushi Rolls
Turkey Slice (Whole 30 Compliant)
Pureed or shredded carrots
Mayo (Whole 30 Compliant)
Mix mayo and carrots
Spread over turkey, roll up turkey
Avocado Egg &
Bacon Salad
1 avocado
6 eggs
Crumbled bacon
Juice from half a lemon
Salt
Pepper
Garlic Powder
Cream the avocado (I used an immersion blender) I crumbled
previously cooked bacon, chop eggs, mix!
Add seasoning to taste.
Curry Chicken Salad
*** My fav recipe so far
1 Can of Whole 30 compliant chicken (you could always cook
and shred it, but why?)
Red Grapes Quartered
Compliant Mayo (I used this, but it’s going quickly so I’m
going to try to make my own: https://thrivemarket.com/primal-kitchen-avocado-oil-mayo)
Sea Salt
Yellow Curry
Turmeric
2 Medjool dates blended or food processed
Add all ingredients to taste. Dates are a great sweetener!
Paleo Meatloaf
2 lbs Ground
Beef
1 lb ground
pork
1 cup
shredded carrots
1 cup yellow
onion
green bell
pepper
1 cup
chopped fresh tomato
cup almond
meal, 2 eggs
1 t Kosher
Salt,
1/2t pepper,
Sauce: 15 oz Tomato Sauce, 6 oz Tomato Paste, 2 T Grainy/Spicy Mustard, 2T
Balsamic Vinegar
Preheat Oven
to 375 Degrees, Mix all Loaf ingredients together, , form loaf, bake 357 for 45
Min, Whisk Sauce ingredients together, after 45 Min coat meatloaf, bake for 15 more minutes, let
cool slightly
Couple
things on this… I made it more than 24 hours before I intended to cook it. Then I thawed in the fridge for 24 hours,
which wasn’t enough time…. It took that sucker 4 hours to cook.
In the
future, I won’t freeze it. Also, I love
all the veggies in this, but the loaf itself was TOTALLY bland. In the future, I’ll add coconut aminos,
substituting for soy sauce which I usually use.
I’ll also add minced garlic, and way more salt.
